These Instant Pot Mini Meatloaves are made in an egg or muffin mold and are a fun way to make dinner unique. They’re easy to make and are great for meal prep too.

If you like meatloaf and want a different way to make it, why not try these fun mini meatloaves that you can make in an egg bite mold or silicon muffin pan. Kids love them!
You need just a few ingredients to put these together. Ground beef, onion, a few seasonings and some breadcrumbs and dinner is done.
Ingredients You Need
- Ground beef – Feel free to use the fat percentage you like best, just note that the amount of breadcrumbs needed may differ depending on how much fat is in your ground beef. We are using Butcher Box 85-15 for this recipe.
- Onion – Onion adds flavor and moisture to the ground beef. We are grating it for this recipe to keep the pieces small. You could add chopped onion if you like.
- Seasonings – Italian seasoning, garlic powder, salt, black pepper.
- Egg – The egg acts as a binding agent for the mini meatloaves.
- Panko bread crumbs – We are using panko for this recipe but you could use regular breadcrumbs also.
- Ketchup – Ketchup adds a nice sweetness to the mini meatloaves and prevents them from going dry. This is optional.
Equipment Needed
Instant Pot – I use a 6-quart Instant Pot Plus to make all of my recipes. If you’re using an 8-quart pot, you will need to adjust the amount of liquid accordingly, as it requires more than the 6 quart to build steam.
Egg mold or Muffin pan – If you’ve made egg bites before, you know that this egg mold or muffin pan is super versatile for the Instant Pot. You can make pumpkin pie bites, brownie bites, pancake bites – you name it!
Mixing Bowl – A medium sized mixing bowl is indispensable in the kitchen.
How to Make Instant Pot Mini Meatloaves
In a bowl, mix the meat with the remaining ingredients, except the ketchup.
Lightly pack the meat mixture into the wells of a round silicone cupcake or muffin mold.
Add 1 cup of water to the inner pot.
Place the trivet in the bottom of the Instant Pot and set the muffin mold on top. Stack them if using 2 molds at a time.
Close the lid and set the valve to sealing, if necessary. Press the Pressure Cook or manual button and set for 30 minutes at high pressure.
When done, manual release the pressure and insert a meat thermometer into the meatloaf. The internal temperature should be at least 155° F.
If this temperature has been reached, carefully remove the molds from the Instant Pot. If not, place the lid back on and allow to steam for 3-5 more minutes, then check again.
Turn on your oven broiler. Place the muffins on a baking sheet. Brush the tops with ketchup and place them under the broiler for 3-5 minutes or until the ketchup starts to bubble. Remove them from the oven and serve immediately.
Why Make it In the Instant Pot?
- It’s easy enough to make a meatloaf, but it takes quite a while to cook in the oven. A typical loaf-sized meatloaf takes about 40-50 minutes to bake. In the instant pot, it takes 30 minutes, so you’ll save a little time.
- The cute little loaves are great for meal prep and they are very easy to freeze, so you can just pop them in the microwave when you need them.
- Kids love them! These are great for kids who refuse to eat regular meatloaf. They’re fun and they have ketchup on them.
Can You Freeze Meatloaf?
Yes, they are great for freezing. You can make a big batch and freeze them either before or after cooking. If freezing before, put them in the mold and freeze them, then pop them out and store them in a freezer bag. You’ll need to just give them 24 hours to defrost time in the fridge before you cook them.
You can also freeze these mini meatloaves after you’ve cooked them. Once they’ve cooled, put them in a freezer bag in the freezer. Take them out and warm them in the microwave, put them back in the Instant Pot for 10 minutes, or pop them in your air fryer.
Tips & Notes
- Silicon is not rated for 500° F so you will have to remove the meatloaves and transfer them to a baking sheet to broil.
- Adding grated onion to the meat mixture is a great way to get onion flavor and add moisture to the recipe without big chunks of onion that some may find off putting.
- You can use all the wells of the egg mold to cook these mini meatloaves. Make sure to test the middle well to make sure it is up to temperature.
