Equipment

Ingredients

  • 1 pound ground beef
  • 1/4 cup onion grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • 1/3 cup panko bread crumbs
  • 1 cup water
  • 1/3 cup ketchup

Instructions

  • In a bowl, mix the meat with the remaining ingredients, except the ketchup.
  • Lightly pack the meat mixture into the wells of a round silicone cupcake or muffin mold.
  • Add 1 cup of water to the inner pot. Place the trivet in the bottom of the Instant Pot and set the muffin mold on top. Stack them if using 2 molds at a time.
  • Close the lid and set the valve to sealing, if necessary. Press the Pressure Cook or manual button and set for 30 minutes at high pressure.
  • When done, manual release the pressure and insert a meat thermometer into the meatloaf. The internal temperature should be at least 155° F.
  • If this temperature has been reached, carefully remove the molds from the Instant Pot. If not, place the lid back on and allow to steam for 3-5 more minutes, then check again.
  • Turn on your oven broiler. Place the muffins on a baking sheet. Brush the tops with ketchup and place them under the broiler for 3-5 minutes or until the ketchup starts to bubble. Remove from the oven and serve immediately.

Notes

  • Silicon is not rated for 500° F so you will have to remove the meatloaves and transfer them to a baking sheet to broil.
