Instant Pot Rice & Beans are probably one of the best things you can make in your Instant Pot. It’s made with brown rice, canned black beans, a can of crushed tomatoes, and a few simple seasonings.

This is an incredibly easy dish to make. I find it very useful to have as a recipe to make for pot lucks and family dinners, because it’s a dump recipe that you just put into the Instant Pot and let it do its thing.
I’ve never had an issue with this recipe giving me the burn notice on my Instant Pot, but if yours is prone to giving this notice when cooking rice, you may need to add 1/4 cup more water.

Ingredients You Need

- Long grain brown rice: Different types of rice will require different cooking times, so you may need to adjust the cooking time if you use different rice.
- Black beans: Rinsed and drained
- Onion: Any onion you have on hand will work. Our go-to onions are usually sweet or yellow onions. Chopped into same sized pieces.
- Canned chopped tomatoes: We like canned chopped tomatoes because they are easy. You could use fresh tomatoes if you want.
- Vegetable or chicken broth: Use whatever broth you have on hand.
- Seasonings: cumin, garlic powder, salt
- Cilantro: Loosely packed and chopped. If you aren’t a fan of cilantro check out these great substitutes.
Helpful Tips
- If the rice and beans are a bit liquidy or a bit crunchy, close the lid and let them sit for 10 more minutes.
- You can lightly spray the bottom of your pot with cooking spray to keep the rice from sticking.
- Different types of rice will require different cooking times, so you may need to adjust the cooking time if you use different rice.
- If your Instant Pot is prone to giving the dreaded burn notice when cooking rice, you may need to add 1/4 cup more water.

Ingredients
- 1/2 cup (80 g) onion chopped
- 1 cup (185 g) long grain brown rice
- 1 can black beans rinsed and drained
- 2 cups (473 ml) vegetable or chicken broth
- 1 tablespoons (6 g) cumin
- 1/2 tablespoon (4 g) garlic powder
- 3/4 teaspoon (4.5 g) salt
- 15 oz (425 g) can chopped tomatoes
- 1/4 cup (4 g) cilantro chopped loosely packed
Instructions
- Add the onions, rice and beans to the Instant Pot. Pour in the broth and stir.
- Add the cumin, garlic powder, salt and then layer the diced tomatoes over the top. Do not stir.
- Close and lock the lid. Set the cook time to 25 minutes on high pressure. When done, do a quick release of the pressure.
- Stir in the cilantro and serve.

Possible Substitutes
You can substitute the rice for a white rice or wild rice, but the time for cooking it will vary. For white rice, you’ll need to cook it for just 12 minutes. For wild rice, you’ll need to cook for 30 minutes.
You can use dried black beans in this recipe instead of canned, but you will need to add more water. We have not personally tested it and cannot vouch for the cook time or amount of water needed.
You can use chopped fresh tomatoes if you want. Remove the skins first by blanching them quickly in hot water, then chop them roughly and add the to the pot.

How to Store Instant Pot Rice & Beans
Storing leftovers is very easy. You just need to put it in an air tight container and put it in the refrigerator for up to 6 days. If you want to freeze it, put it in a freezer-safe container and freeze for up to 2 months.
It’s very easy to reheat the leftovers as well. The easiest way is to microwave for 2 minutes. Or you can put it back into the Instant Pot on sauté low for 10-15 minutes, stirring occasionally. You may need to add a bit of water to loosen the rice.
