Instant Pot Rice & Beans
Instant Pot Rice & Beans are probably one of the best things you can make in your Instant Pot. It's made with brown rice, canned black beans, a can of crushed tomatoes, and a few simple seasonings.

1/2 cup (80 g ) onion chopped 1 cup (185 g ) long grain brown rice 1 can black beans rinsed and drained 2 cups (473 ml ) vegetable or chicken broth 1 tablespoons (6 g ) cumin 1/2 tablespoon (4 g ) garlic powder 3/4 teaspoon (4.5 g ) salt 15 oz (425 g ) can chopped tomatoes 1/4 cup (4 g ) cilantro chopped loosely packed
Cook Mode Prevent your screen from going dark
Add the onions, rice and beans to the Instant Pot. Pour in the broth and stir.
Add the cumin, garlic powder, salt and then layer the diced tomatoes over the top. Do not stir.
Close and lock the lid. Set the cook time to 25 minutes on high pressure. When done, do a quick release of the pressure.
Stir in the cilantro and serve.
If the rice and beans are a bit liquidy or a bit crunchy, close the lid and let them sit for 10 more minutes.
You can lightly spray the bottom of your pot with cooking spray to keep the rice from sticking.
Different types of rice will require different cooking times, so you may need to adjust the cooking time if you use different rice.
You can use dried beans in this recipe, but we have not tested it and cannot vouch for the cook time or amount of water needed.
