Instant Pot Prime Rib Soup is the perfect way to use leftover prime rib from the holidays to make a delicious soup that continues the celebration of flavors.
We always make prime rib for Christmas, but no one seems to ever want the ribs that come attached. We still cook the ribs, but now I secret them away to use for my prime rib soup the next day.
If you have any leftover prime rib, you can make this soup. Since it’s already cooked, the flavorful meat will really enhance the taste of the soup. It’s perfect for relaxing and unwinding after the holidays.
Why You’ll Love It
- Minimal cooking time: Making this soup at high pressure in the Instant Pot is what gives it its magic.
- Comfort in a bowl: Every spoonful of this comforting soup will warm your soul, perfect for chilly nights or when you crave for the nostalgia of a home-cooked bowl of soup.
- Meal prep perfection: This soup is the perfect way to repurpose pre-cooked prime ribs. Whip up a large batch and savor the leftovers; the flavors only get better with time.

Ingredients You’ll Need
- Olive Oil – To sauté the veggies in
- Carrot, Onion, Garlic, Fresh Mushrooms – Veggies and aromatics
- Medium potatoes – Add a bit of heartiness to the soup with Russet or yellow potatoes
- Beef Ribs – Purchase fresh from your local butcher. Alternatively, use leftover beef ribs and adjust the cooking time accordingly.
- Beef Stock – I use low-sodium beef stock to manage the salt level. You can also use beef bouillon.
- Salt and Pepper – Use the seasoning at the end to finish the dish, so it doesn’t get over salted.
- Garnish – Chives, green onions, parsley, or cilantro make great garnishes.
Equipment Needed
- Instant Pot – I use a 6-quart Instant Pot Duo Plus to make all of my recipes, but you can use any size or brand of electric pressure cooker. If you’re using an 8-quart pot, you will need to adjust the amount of liquid accordingly, as it requires more water to build steam.
Tips for Making Prime Rib Soup
- While store-bought beef stock works well, using homemade stock allows you to control the flavor and sodium levels more precisely.
- If you prefer a thicker soup, mash some of the potatoes against the side of the Instant Pot with a spoon and stir.
- Refrigerate the soup overnight to make fat-skimming a breeze. The congealed fat can be easily removed from the top once it’s chilled.
How to Make Prime Rib Soup
Step 1: Sauté
Heat the Instant Pot on sauté mode. Add the olive oil. Once hot, add the carrot, onion, and mushrooms. Sauté for 3 minutes. Add the garlic, salt and pepper. Turn off sauté mode.
Step 2: Prepare the Soup
Add the potatoes and beef ribs to the pot. Pour in the beef stock.
Step 3: Pressure Cook
Close and lock the lid. Set the pressure release valve to the sealing position.
Cook on high pressure for 10 minutes. Do a quick pressure release.
Step 4: Shred the Meat
Remove the rib bones from the pot. Strip them of meat. Return the meat to the pot.
Skim off the fat before serving. Garnish with fresh chives.
How to Store & Reheat
Allow the soup to cool to room temperature before refrigerating. Store leftovers in an airtight container to preserve freshness. Refrigerate for up to three days for the best taste and quality.
Reheating
Stovetop: Place leftovers in a saucepan on the stovetop over medium heat. If the soup has thickened in the refrigerator, you can adjust the consistency by adding a splash of beef stock. Heat the soup gently, stirring occasionally. Avoid rapid boiling to prevent overcooking.
Microwave: Transfer the desired amount of soup into a microwave-safe bowl. Heat the soup in short intervals, such as 1-2 minutes at a time, depending on your microwave’s power. Stir the soup between each interval to ensure even heating.
Instant Pot: To reheat Prime Rib Soup in the Instant Pot, place the leftover soup in the pot, set it to the “Sauté” function, and warm it gently, stirring occasionally, until the desired serving temperature is reached.
