Slow Cooker Creamy Pork Chops in the Instant Pot

Ingredients
 

  • 4 bone-in pork chops 1 inch thick
  • 1/2 teaspoon (3 g) salt
  • 1/2 teaspoon (1 g) ground black pepper
  • 1/2 teaspoon (1 g) onion powder
  • 1/4 teaspoon (0.5 g) dried Italian seasoning
  • 10.75 ounce (305 g) can cream of mushroom soup
  • 1/2 cup (118 ml) low-sodium chicken broth
  • 1 teaspoon (5 ml) Worcestershire sauce

Instructions
 

  • Pat dry the pork chops.
  • Mix together the seasonings in a small bowl and season the pork well on both sides.
  • In the Instant Pot, whisk together the cream of mushroom soup, chicken broth, and Worcestershire sauce.
  • Nestle the pork chops into the soup mixture. They don’t need to be fully submerged.
  • Cover with the tempered glass lid or the regular Instant Pot lid with the vent open.
  • Cook on high for 2 1/2 hours. Check the internal temperature of the pork with a meat thermometer to ensure they’ve reached 145-165° F(63-74°C). Serve the pork chops with the mushroom sauce.

Notes

  • Thicker is better. Choose bone-in chops about 1 inch thick for the best results.
  • Pat the chops dry and season them before laying in the bed of sauce in the pot. This will ensure the chops themselves are seasoned and flavorful.
  • Resist the urge to rush; slow cooking is key for fork-tender goodness. It'll take 3-4 hours on high or 5-6 hours on low.
