Instructions
Peel the sweet potatoes and cut them into roughly equal-sized chunks (about 1-2 inches). This will ensure even cooking.
Place the sweet potato chunks in the Instant Pot. Add 1 cup of water to the pot to create steam.
Close the lid of the Instant Pot and set the valve to the sealing position. Pressure cook on high for 8 minutes.
Once the cooking time is complete, do a quick release of the pressure.
Drain any excess water from the pot. Add the milk, butter, salt, and pepper to the sweet potatoes. Use a potato masher or hand mixer to mash until smooth and creamy. Adjust the consistency by adding more milk if desired.
Taste the mashed sweet potatoes and adjust the seasoning. If you prefer a sweeter flavor, stir in a bit of maple syrup or brown sugar.
Transfer the mashed sweet potatoes to a serving bowl and garnish with chopped fresh herbs if desired.
