  • 1.5 pounds (680 g) baby potatoes unpeeled
  • 1 tablespoon (15 ml) extra virgin olive oil
  • 1 teaspoon (3 g) garlic powder minced
  • 1 teaspoon (6 g) salt

Instructions
 

  • Add the potatoes, olive oil, garlic, and salt to the Instant Pot. Stir to coat.
  • Cover with the tempered glass lid or the regular Instant Pot lid with the vent open. Cook for 3 hours on high, or 5-6 hours on low. Do not uncover while cooking.
  • When done, remove the lid. Taste and adjust the seasoning, as necessary.

Notes

  • Cut larger potatoes to match the smaller ones for even cooking.
  • Experiment with different oils, they can subtly change the flavor.
  • Chop and store your ingredients the night before for an easy setup in the morning.
