Instant Pot Pork Chops & Rice

Instant Pot Pork Chops & Rice is a flavorful dish made with pork chops, seasonings, and fluffy white rice cooked in your Instant Pot for an easy weeknight meal.

Ingredients
 

  • 2 boneless pork chops 1" thick
  • 1 tablespoon (14 g) butter
  • 1 teaspoon (5 g) Spanish paprika
  • 1/2 teaspoon (3 g) salt
  • 1/2 teaspoon (2 g) garlic powder
  • 1/2 teaspoon (1 g) mild chili powder
  • 1/4 teaspoon (0.5 g) ground black pepper
  • 1 cup (237 ml) chicken or vegetable broth + 2 tablespoons
  • 1 cup (185 g) white rice Jasmine or Basmati

Instructions
 

  • Mix together the seasonings and sprinkle on both sides of the pork chops.
  • Set the Instant Pot to saute mode. When hot, add the butter. Once melted, add the pork chops to the pot and sear for 1 minute on each side.
  • Remove the pork chops from the pot.
  • Pour in the broth and deglaze the bottom of the pot to remove any browned bits. I have found that since the pot is already hot, some of the broth will evaporate and there won’t be quite enough water for the rice. So be sure to add 2 extra tablespoons of broth or water to make up for it.
  • Pour the rice into the pot and stir.
  • Place the trivet on top of the rice in the pot. Place the pork chops on the trivet.
  • Close the lid and set the vent to sealing, if necessary for your model. Set to cook for 4 minutes on high pressure. It should take about 5 minutes to come up to pressure.
  • When the time is up, manually release the pressure. Do not allow it to naturally release or the pork will be overcooked. The pork should measure at least 145° F on a meat thermometer.
  • Remove the pork from the pot. Fluff the rice. Serve the rice with the pork.

Notes

  • Use pork chops that are about 1 to 1 1/2" thick for the best result.
  • You can increase the number of pork chops you cook in desired. There will be no time adjustment.
  • To cook 1 1/2 cups of rice, add 1 2/3 cup water. To cook 2 cups of rice, add 2 1/4 cups water.
  • Do not leave the pot unattended. As soon as the 4 minutes are up, release the pressure and turn off the pot, to avoid overcooking the rice or the pork.
