Equipment

Ingredients

  • 1 cup cold water
  • 1 pound mini carrots halved
  • 1 tablespoons butter
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic seasoning unsalted
  • fresh parsley for garnish

Instructions

  • Pour the water into the inner pot. Add the cut carrots to the pot. You can also use a steamer basket, but it’s not necessary.
  • Close the lid, turn the valve to sealing. Press the Pressure Cook or manual button and set to cook for 1-2 minutes on high pressure.
  • When the cooking time is up, do a quick release and remove the lid. Carefully pour the liquid out of the Instant Pot, leaving the carrots inside.
  • Turn the Instant Pot on sauté mode, on high. Add in the butter, honey, and salt. Cook on low for 2-3 minutes, until the glaze is bubbly. Add the garlic and cook for 30 seconds. Turn off sauté mode and remove the pot from the heat. Garnish with fresh parsley, if desired
  • Serve immediately.

Notes

  • Cook for 1 minute for firm carrots; 2 minutes for more tender carrots
