Ingredients
 

  • 1 teaspoon brown sugar
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder Arbol & Ancho or other Mexican chilis
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground celery seed
  • 1/2 teaspoon ground Mexican oregano
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground coriander
  • 2 pounds flank steak
  • 1 tablespoon cooking oil
  • 1 cup hot beef broth

Instructions
 

  • Mix together all of the seasonings in a small bowl. Place the flank steak in a shallow bowl and coat with the mixture. Cover and marinate in the refrigerator for 2 hours.
  • Remove the steak from the refrigerator 15 minutes before cooking.
  • Heat the Instant Pot on sauté mode, add the cooking oil. When hot, place the steak in the pot and sear for 1 minute per side.
  • Remove the steak and turn off sauté mode. Pour in the hot beef broth and deglaze the pot with a whisk to remove the browned bits.
  • Add the steak back into the pot.
  • Secure the lid and set the valve to sealing. Press the pressure cook or manual button and set the time to 4 minutes. It will take about 5 minutes to come up to pressure.
  • When the time is up, do a quick pressure release and transfer the steak to a plate to rest for 5 minutes.
  • Slice the steak against the grain and serve.
