Ingredients List: – 2 cans cannellini beans – 2 cups chicken broth – 1 large chicken breast, approx 8 oz – 1 small onion, chopped – 1 can of corn, drained – 1 1/2 tsp cumin – 1 tsp chili powder – 1 tsp garlic powder – 1/2 tsp salt – 1/2 tsp ground black pepper – 1/2 cup shredded cheddar cheese – 1/2 cup sour cream – 1 avocado, for garnish

Get Prepared

STEP 1

Add all the ingredients, except the toppings and garnish, to the Instant Pot.

STEP 2

Close and lock the lid. Set the vent to sealing.

STEP 3

Press the pressure cook button and set the time to 20 minutes. When the time is up, let the pressure release naturally for 10 minutes, then do a quick release.

STEP 4

Add the cheese and sour cream. Stir well. Serve with extra sour cream, cheese and avocado as a garnish, if desired.

You can store any leftover chicken chili in the refrigerator in an air tight container for up to 4 days, or freeze it for up to a month.
